What is sadza?

Sadza, a staple of the Zimbabwean diet, is maize (corn) ground into a fine meal, which is cooked with water until it has the consistency of mashed potatoes. Sadza, often eaten plain, may be served with meat or vegetables for a little added flavor.

  • Bring 3 1/2 cups of water to a boil, reserving 1/2 cup
  • In a small bowl, mix 1/2 cup water with 2 T. cornmeal to make a paste
  • Pour the paste into the boiling water, stirring constantly to prevent lumps
  • When smooth, cover pot and allow to cook over medium heat for 30-45 minutes
  • Add the remaining cornmeal gradually, stirring continuously
  • Cover pot and reduce heat
  • Serve with a stew or with peanut sauce
